First of all, I'm not going to pretend that I know the answer to this, but I do have some thoughts; they are based in the ancient tradition of body-typing.

I was at a holiday gathering a few years ago which happened to include friends as well. We were having casual conversation and I, as usual, only chimed in on particular occasions. My dynamic hubby on the other hand, often prompted and guided conversation.
Then, the host's neighbor says to me rather matter-of-factly, "You must be a writer." in front of several people.
She piqued my interest. "Why, yes I am!" I said and shared briefly that I was currently at the most active point of writing my first book. "How did you come to that conclusion?" I asked, as I was tremendously curious.
"You are quiet and very observant." She said simply.
It was actually quite a short conversation, but it stuck with me.
She was describing a couple of very Airy traits that show up in me: I love to quietly observe people and I tend to live in my head.
My Fiery hubby is also acutely observant: I want to be sure to clarify that Air-types are not the only ones who are observant. In fact many body-types share similar characteristics, but they put their own body-type's twist on things.
For example, a Fiery person is often observant in a more active way. They will point out things in other people- sometimes directly to the person. This is very helpful when you want honest feedback and direction.
So why do opposite attract?
Nature seeks balance.
When our bodies are cold we get the shivers to general internal heat. Plants will distribute water to fruits and vegetation depending on availability. A palm tree is seemingly perfectly constructed to withstand gale-force winds.
We instinctively seek balance. When we are hungry we eat. Thirsty, drink. Tired; sleep.
Speaking on a very rudimentary level, we are programmed to survive.
Traditionally; hardier, sturdier people can endure more work, toil and even famine. These are the Earthier people.
We Air-types by contrast do not tend to endure what Earthy and Fiery people can physically. We have smaller frames and tire more easily and built and seemingly programmed for more cerebral and even artistic work.
Where the former Earthier people could plow and build all day, we Airy people were more adept at planning for the growing season or preparing meals, and the Fiery people were more apt to hunt protect and execute big plans (observing the environment, making decisions, being direct with people and guiding them).
These are very complimentary roles; and as you can imagine with just these examples, each types' characteristics help ensure the group's survival.
So why to opposites attract? In my observation, it's so we are balanced by one another: so that we can survive and even thrive!
Observing, through the lens of body-typing can help a person to better understand and even have compassion and appreciation for other people.
