Recipe- Yammies

Yammies
Free of Gluten, Dairy (opt.), Nuts, Soy, Corn

This is one our family’s favorite side dishes. It goes great with breakfast food like eggs and sausage. Being a root vegetable, yams are naturally grounding and balancing for Air-types. This is also indicated by their sweet flavor, which is also a balancing characteristic for Fire-types. Earth-types will more than likely enjoy yams greatly, but will need to be sure to eat these naturally sugary, healthy ‘candy’ earlier in the day as to give the body plenty of time to use this abundant caloric energy. This is a healthy ‘comfort food’ that all types will enjoy. Serve seasoned with salt and/or pepper and perhaps a bit of ketchup and enjoy!

Serving size and quantity: one large garnet yam will serve 1-2 people

Estimated time to prepare: 5 minutes      Cook time:  10-15 minutes


Ingredients
1/2 - 1 large garnet yam per person
3 Tablespoons of butter or coconut oil- add more later while cooking if desired
salt and pepper to taste

Directions
 Peel with a potato peeling and cube yams into 1/2” x 1/2” pieces
 Preheat a large fry pan on medium to medium-high heat and melt butter
Add cubed yams to fry pan, cover and stir often.
Cook to desired crispness.


How to pack for a “bag lunch”
Yammies are great cold or reheated. While I promote eating foods as fresh as possible, i.e. not eating leftover- there are times when we must. Pack leftover yammies into a reusable container. Be sure to let yammies cool completely before putting in plastic containers, or put in glass containers. Eat leftovers cool which is especially good in the summer, or reheat in a pan on the stove. Enjoy!
